Moist Fresh Milled Pumpkin Muffins with Einkorn Option

These pumpkin muffins are the perfect treat for both fall and winter! They’re incredibly moist, full of cozy flavor, and hold together beautifully, especially when you use a mix of soft white and einkorn flour. The combination of cinnamon, nutmeg, and cloves gives these muffins that warm, comforting aroma we all crave.

Ingredients:

• 1/2 cup oil

• 3/4 cup packed brown sugar

• 1 cup pumpkin puree

• 3 eggs

• 1 tsp pure vanilla extract

• 1/2 tbsp molasses (optional, but really adds an extra depth in the flavor)

• 190g soft white/einkorn mixture (110g soft white, 80g einkorn – you can use all soft white, but trust me, einkorn makes a big difference in keeping everything together)

• 1 tsp baking powder

• 1/2 tsp baking soda

• 1/4 tsp salt

• 3/4 tsp cinnamon

• 1/4 tsp nutmeg

• 1/8 tsp cloves

Directions:

1. Preheat your oven to 425°F. Line a muffin tin with paper liners or grease them lightly.

2. In a large mixing bowl, whisk together the oil and brown sugar until smooth. Add the pumpkin puree, eggs, molasses, and vanilla extract. Mix until everything is well combined.

3. In a separate bowl, whisk together the soft white and einkorn flours, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.

4. Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Be careful not to overmix.

5. Spoon the batter into the muffin cups, filling each about 3/4 full.

6. Bake at 425°F for 5 minutes, then reduce the temperature to 350°F and bake for an additional 18 minutes, or until a toothpick inserted comes out clean.

7. Let the muffins cool for a few minutes in the pan before transferring to a wire rack to cool completely.
